Yo Ho Ho and a Big Tray of Rum Balls

Everyone has their Christmas traditions and strangely, a lot of them involve food. For me making rum balls is definitely a part of the season. Eating rum balls is an even bigger part of the season. It gets me in touch with my pirate side. Now that Pirates Of The Caribbean - Dead Man’s Chest (Widescreen Edition)“>Pirates Of The Caribbean 2 is out on video, maybe a new Christmas tradition should be to watch the movie while tasting (that sounds better than gorging on) rum balls. That would get everyone in touch with their pirate side. So, how do you make these rum balls? Glad you asked!
Ingredients:
3/4 cup whipping cream
1/4 cup butter
3 Tbsp sugar
3 Tbsp rum
7 squares semi-sweet baking chocolate
3 cups chocolate cookie crumbs
1 cup chocolate sprinkles
Melt chocolate squares and set aside. In a medium saucepan over medium heat, stir together whipping cream, butter, and sugar. Bring to a boil, then remove from heat. Add rum, melted chocolate, and cookie crumbs. Mix well. Shape into about 40 balls. Roll in chocolate sprinkles, then chill on a wax paper lined cookie sheet. In place of the rum you can substitute rum extract mixed with water, condensed orange juice, or Grand Marnier. Yo ho ho!
