White Chocolate Peppermint Bark

This is one of the easiest chocolate recipes around, and one of my newest inclusions into my little cookie tins I give to neighbors and friends!
White Chocolate Peppermint Bark
- Crushed peppermint candy canes or starlight peppermints, about 1 cup
- 2 pounds white chocolate
- Peppermint flavoring, optionalPlace candy canes in a plastic bag and hammer into 1/4-inch chunks or smaller. Melt the chocolate in a double boiler. Combine candy cane chunks with chocolate (add peppermint flavoring at this point if desired.)
Pour mixture onto a cookie sheet layered with parchment or waxed paper and place in the refrigerator for 45 minutes or until firm. Remove from cookie sheet and break into pieces (like peanut brittle.)
That’s it! If you’re not crazy about white chocolate you can substitute with vanilla baking chips.

I love this recipe. It’s really fantastic, and really easy. When I made it and offered some to my neighbors, they ate it up on the spot and loved it. They kept taking more! I just pretended like it was a really difficult thing to make.
Note: If you want to make it even tastier and prettier, melt some milk chocolate and pour it in with the white chocolate when you pour it into the foil. Take the end of a spoon and swirl it around with the white chocolate. It creates a marble effect, and is even more chocolatey.
