Chocolate Rice Krispies Treats

Man, I’m having a hard time coming up with chocolate content the last few days! This time of year especially I want to curl up on the couch with some coffee, the kids and husband, a good movie and the glow from the Christmas tree. Instead I’ve been baking and surprisingly, it’s not all chocolate baking so while I’ve been busy it hasn’t been much I can use here! Today, however, we’re making these:
Chocolate Rice Krispy Treats
1/4 cup butter
2-3 tablespoons unsweetened cocoa powder
1 pkg. (10 oz., about 40) regular marshmallows or 4 c. miniature marshmallows
6 cups Rice Krispies cereal
1 teaspoon chocolate or vanilla extractSpray a 13 x 9 x 2 inch baking pan with non-stick spray or brush with butter.
In a large saucepan, melt butter and marshmallows over low heat, stirring until melted. Stir in cocoa powder and chocolate or vanilla extract. Remove from heat.
While still warm, stir in Rice Krispies. Continue to stir until cereal is well mixed and coated.
Press the still warm mixture into the pan using a silicone spatula or the buttered back of a large spoon. Allow to cool and cut into squares.
These would be extremely yummy with some melted chocolate chips drizzled over the top, or dip the squares into melted chocolate for a half-and-half look. You could also mix in a little peanut butter with the melted chocolate and mix in well before dipping.
