Chocolate Pudding Cake

As a kid visiting my grandparents there was one thing we could always count on. They would have a box of chocolate pudding cake mix in the cupboard ready for us to make and devour. Now I don’t know if “they” even still sell boxes of chocolate pudding cake mix. However, my tastes have matured a bit (at least something about me has matured!) and I’ve discovered recipes that make chocolate pudding cake that tastes even better. Pudding cake comes out of the oven with its own sauce on the bottom. You can flip it over to serve, eat it warm with a sauce, or wait until it cools and the sauce turns to a gel. I prefer it warm with the sauce on the bottom.
Ingredients:
1 cup flour
3/4 cup sugar
2 Tbsp cocoa powder
2 tsp baking powder
1/4 tsp salt
1/2 cup milk
2 Tbsp vegetable oil
1 tsp vanilla
3/4 cup brown sugar
1/4 cup cocoa powder
1-1/2 cups boiling water
Preheat oven to 350F. In a medium bowl, combine flour, sugar, 2 Tbsp cocoa powder, baking powder, and salt. Stir in milk, oil, and vanilla. Pour into an ungreased 9×9 square baking pan and spread evenly. Sprinkle with brown sugar and 1/4 cup cocoa powder. Pour boiling water over top. Bake for 40 minutes, then let stand for 15 minutes before scooping into bowls.
